Blue Swimmer Crab Lime & Coconut Curry

Im not going to bore you, or try to convince you, or try to talk you into trying this sensational crab curry recipe. 

The truth is; if you're looking for a quick and easy crab curry recipe, then you're in the right place.

This recipe contains only 11 ingredients; most of which you would either already have in the pantry at home or would easily find on the shelves at your local super market. 

serves: 2-4 ppl 

prep time: 10 mins

cooking time: 15-20mins

Ingredients:

  • 4 teaspoons curry powder 
  • 4 tablespoons olive oil
  • 2 white onions, halved and sliced
  • 1 inch of ginger, peeled and thinly sliced
  • 1 cup water
  • 100ml/3.5ozs. coconut cream
  • Juice from 1-2 limes
  • 6 curry leaves (fresh is recommended)
  • 2 teaspoons salt 
  • 3 teaspoons raw or white sugar (optional but recommended)
  • 750g blue swimmer crab, cut in half

Directions:

Heat a large pot and dry fry the curry powder for a couple of minutes until fragrant.

Add olive oil, onions and the sliced ginger. Fry until the onions are coated in spices and softened. 

Add the water, coconut cream, lime juice and curry leaves and then season with salt and sugar. 

Add the crab and cook with the lid on until the crab shell turns red whilst rotating the crabs every couple of minutes to ensure they're evenly cooked through.

Top with your choice of greens (coriander leaves or sliced spring onion) and your favourite base or sides (rice, noodles etc).
